Wine is an alcoholic beverage made from fermentation of grape juice. The natural chemical balance of grapes is such that they can ferment without the addition of sugars, acids, enzymes, or other nutrients. Although fruits other than grapes can also be fermented, the resultant wines are normally named after the fruit from which they are produced (for example, apple wine) and are known as fruit wine (or country wine). Others, such as barley wine and rice wine (e.g. sake), are made from starch-based materials and resemble beer more than wine; ginger wine is fortified with brandy. In these cases, the use of the term "wine" is a reference to the higher alcohol content, rather than the production process. The commercial use of the word "wine" (and its equivalent in other languages) is protected by law in many jurisdictions. Wine is produced by fermenting crushed grapes using various types of yeast which consume the sugars found in the grapes and convert them into alcohol. Various varieties of grapes and strains of yeasts are used depending on the types of wine produced.
Wine stems from an extended and rich history dating back about 8,000 years and is thought to have originated in present-day Georgia or Iran. Wine is thought to have appeared in Europe about 6,500 years ago in present-day Bulgaria and Greece and was very common in ancient Greece and Rome; the Greek god Dionysos, and his Roman counterpart Liber represented wine. Grenache (/ɡrəˈnæʃ/) or Garnacha (IPA: [ɡaɾˈnatʃa]) is one of the most widely planted red wine grape varieties in the world. It ripens late, so it needs hot, dry conditions such as those found in Spain, where the grape is believed to have originated. It is also grown in the Italian island of Sardinia, the south of France, Australia, and California's Monterey AVA, Paso Robles, Santa Barbara County and San Joaquin Valley.
It is generally spicy, berry-flavored and soft on the palate and produces wine with a relatively high alcohol content, but it needs careful control of yields for best results. Characteristic flavor profiles on Grenache include red fruit flavors (raspberry and strawberry) with a subtle, white pepper spice note. Grenache wines are highly prone to oxidation, with even young examples having the potential to show browning (or "bricking") coloration that can be noticed around the rim when evaluating the wine at an angle in the glass. As Grenache ages the wines tend to take on more leather and tar flavors. Wines made from Grenache tend to lack acid, tannin and color, and it is often blended with other varieties such as Syrah, Carignan, Tempranillo, and Cinsaut. (Full article...) -
Sherry (Spanish: jerez [xeˈɾeθ]) is a fortified wine made from white grapes that are grown near the city of Jerez de la Frontera in Andalusia, Spain. Sherry is a drink produced in a variety of styles made primarily from the Palomino grape, ranging from light versions similar to white table wines, such as Manzanilla and fino, to darker and heavier versions that have been allowed to oxidise as they age in barrel, such as Amontillado and oloroso. Sweet dessert wines are also made from Pedro Ximénez or Moscatel grapes, and are sometimes blended with Palomino-based sherries.
Under the official name of Jerez-Xérès-Sherry, it is one of Spain's wine regions, a Denominación de Origen Protegida (DOP). The word sherry is an anglicisation of Xérès (Jerez). Sherry was previously known as sack, from the Spanish saca, meaning "extraction" from the solera. In Europe, "sherry" has protected designation of origin status, and under Spanish law, all wine labelled as "sherry" must legally come from the Sherry Triangle, an area in the province of Cádiz between Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María. In 1933 the Jerez denominación de origen was the first Spanish denominación to be officially recognised in this way, officially named D.O. Bombino bianco is a white Italian wine grape variety planted primarily along Italy's Adriatic coast line, most notably in Apulia. The vine is prone to high yields and often produces neutral flavor wines. The grape is known under many synonyms throughout Italy including Debit and Pagadebit, names which came from the grape's reputation for being a high yielding and reliable crop for vineyard owners to grow that would assure them that on each vintage they could pay off their debts.
The exact origins of the grape are unknown, with early wine texts speculating that the grape may have originated in Spain. Today most ampelographers believe that the grape is indigenous to southern Italy, with Apulia believed to be the most likely home of the grape. In the 20th century DNA profiling has shown that while Bombino bianco is closely related to Bombino nero, the grape is not color mutation but its own distinct variety. Though Bombino bianco shares many synonyms with Trebbiano Toscano (also known as Ugni blanc), the two grapes are unrelated. DNA research has also shown that Bombino bianco may be one of the parent varieties of the Impigno grape of the Ostuni DOC in Apulia and of the Moscatello Selvatico grape that is also native to the same region. A cellarette or cellaret is a small furniture cabinet, available in various sizes, shapes, and designs which is used to store bottles of alcoholic beverages such as wine or whiskey. They usually come with some type of security such as a lock to protect the contents. Such wooden containers for alcoholic beverages appeared in Europe as early as the fifteenth century. They first appeared in America in the early eighteenth century and were popular through the nineteenth century. They were usually made of a decorative wood and sometimes had special designs so as to conceal them from the casual observer. They were found in pubs, taverns, and homes of the wealthy. Anjou wine is produced in the Loire Valley wine region of France near the city of Angers. The wines of region are often grouped together with the wines of nearby Saumur as "Anjou-Saumur". Along with the wines produced further east in Touraine, Anjou-Saumur make what is collectively known as the "Middle Loire" (as opposed to the "Upper Loire" which includes the wine regions of Sancerre and Pouilly-Fumé. Within the Anjou wine region are several Appellation d'origine contrôlées (AOCs) responsible for a broad spectrum of wines including still red, white and rosé produced with varying levels of sweetness. Extending across the Deux-Sèvres, Maine-et-Loire and Vienne départements, the generic Anjou AOC appellation and its various sub-appellations encompasses vineyards across more than 151 communes.
Wine expert Tom Stevenson describes the wines of the area as being a "microcosm of the Loire Valley", featuring wines made from every grape variety and in almost every style produced in the entire Loire wine region. Among the wines of Anjou, Savennières is noted for its dry Chenin blanc wines and the Coteaux du Layon for its sweet dessert wines that includes the botrytized wines of Bonnezeaux and Quarts de Chaume. Various rosé wines are produced in the region under different AOC designation include Rosé d'Anjou, the most basic level made predominantly from Grolleau, and Cabernet d'Anjou which is usually made from Cabernet Franc or Cabernet Sauvignon. For most of its history, dry red wines have represented a small percentage of Anjou winemaking but in recent years the numbers have been steadily increasing—aided, in part, by the 1987 establishment of the Anjou-Villages AOC designation for red wines which can be made from only Cabernet Sauvignon and Cabernet Franc. The Gamay grape of the Beaujolais wine region has had a long history in the Anjou with its own Anjou-Gamay AOC. Grapes from around the region can go into basic Anjou blanc and Anjou Rouge AOC wines. A steep vineyard overlooking the Mosel River
Mosel (German: [ˈmoːzl̩] ⓘ) is one of 13 German wine regions (Weinbaugebiete) for quality wines (Qualitätswein, formerly QbA and Prädikatswein), and takes its name from the Mosel River (French: Moselle; Luxembourgish: Musel). Before 1 August 2007 the region was called Mosel-Saar-Ruwer, but changed to a name that was considered more consumer-friendly. The wine region is Germany's third largest in terms of production but some consider it the leading region in terms of international prestige.
The region covers the valleys of the rivers Mosel, Saar, and Ruwer from near the mouth of the Mosel at Koblenz and upstream to the vicinity of Trier in the federal state of Rhineland-Palatinate. The area is known for the steep slopes of the region's vineyards overlooking the river. At 65° degrees incline, the steepest recorded vineyard in the world is the Calmont vineyard located on the Mosel and belonging to the village of Bremm, and therefore referred to as Bremmer Calmont. The Mosel is mainly famous for its wines made from the Riesling grape, but Elbling and Müller-Thurgau also contribute to the production, among others. (Full article...) -

Wine and food matching is the process of pairing food dishes with wine to enhance the dining experience. In many cultures, wine has had a long history of being a staple at the dinner table and in some ways both the winemaking and culinary traditions of a region will have evolved together over the years. Rather than following a set of rules, local cuisines were paired simply with local wines. The modern "art" of food pairings is a relatively recent phenomenon, fostering an industry of books and media with guidelines for pairings of particular foods and wine. In the restaurant industry, sommeliers are often present to make food pairing recommendations for the guest. The main concept behind pairings is that certain elements (such as texture and flavor) in both food and wine interact with each other, and thus finding the right combination of these elements will make the entire dining experience more enjoyable. However, taste and enjoyment are very subjective and what may be a "textbook perfect" pairing for one taster could be less enjoyable to another.
While there are many books, magazines and websites with detailed guidelines on how to pair food and wine, most food and wine experts believe that the most basic element of food and wine pairing is understanding the balance between the "weight" of the food and the weight (or body) of the wine. Heavy, robust wines like Cabernet Sauvignon can overwhelm a light, delicate dish like a quiche, while light-bodied wines like Pinot Grigio would be similarly overwhelmed by a hearty stew. Beyond weight, flavors and textures can either be contrasted or complemented. From there a food and wine pairing can also take into consideration the sugar, acid, alcohol and tannins of the wine and how they can be accentuated or minimized when paired with certain types of food. Skin-contact wine before clarification and stabilization
Orange wine, also known as skin-contact white wine, skin-fermented white wine, or amber wine, is a type of wine made from white wine grapes where the grape skins are not removed, as in typical white wine production, and stay in contact with the juice for days or even months. This contrasts with conventional white wine production, which involves crushing the grapes and quickly moving the juice off the skins into the fermentation vessel. The skins contain color pigment, phenols and tannins that would normally be considered undesirable for white wines, while for red wines skin contact and maceration is a vital part of the winemaking process that gives red wine its color, flavor, and texture.
International Organization for Vine and Wine (OIV) describes orange/amber wine as "White wine with maceration" and prescribes the minimum duration of the maceration phase to be 1 month. (Full article...) -
The first wine produced in South Africa was made by Jan van Riebeeck at a settlement founded by the Dutch East India Company
The early history of the South African wine industry (also known as New World wine) can be traced to the founding of a supply station at the Cape of Good Hope by the Dutch East India Company. Jan van Riebeeck was given the task of managing the station and planting vineyards to produce wine and grapes in the Wijnberg (Wine mountain Area); that could be used to ward off scurvy for sailors continuing on their voyages along the spice route. In 1685, another Cape Governor, Simon van der Stel, purchased a large 750-hectare (1,900-acre) estate, founding what later became the world-renowned Constantia wine estate. In the 19th century, South Africa fell under British rule which proved lucrative for the wine industry as South African wine flowed into the British market. This prosperity lasted until the 1860s when the Cobden–Chevalier Treaty signed by the Palmerston government and France reduced the preferential tariffs that benefited South African wine in favor of French wine exports.
Following the devastation from the phylloxera epidemic in the late 19th century, many vineyards were replanted with high yielding grape varieties such as Cinsaut. By the early 1900s there was a large glut of wine, creating a wine lake effect which led some producers to pour their unsaleable wine into local rivers and streams. The depressed prices caused by this out-of-balance supply and demand dynamic prompted the South African government to fund the formation of the Koöperatieve Wijnbouwers Vereniging van Zuid-Afrika Bpkt (KWV) in 1918. Initially started as a co-operative, the KWV soon grew in power and prominence, setting policies and prices for the entire South African wine industry. White wine is a wine that is fermented without skin contact. The colour can be straw-yellow, yellow-green, or yellow-gold. It is produced by the alcoholic fermentation of the non-coloured pulp of grapes, which may have a skin of any colour. White wine has existed for at least 4,000 years.
The wide variety of white wines comes from the large number of varieties, methods of winemaking, and ratios of residual sugar. White wine is mainly from "white" grapes, which are green or yellow in colour, such as the Chardonnay, Sauvignon blanc and Riesling. Christian views on alcohol are varied. Throughout the first 1,800 years of Church history, Christians generally consumed alcoholic beverages as a common part of everyday life and used "the fruit of the vine" in their central rite—the Eucharist or Lord's Supper. They held that both the Bible and Christian tradition taught that alcohol is a gift from God that makes life more joyous, but that over-indulgence leading to drunkenness is sinful. However, the alcoholic content of ancient alcoholic beverages was significantly lower than that of modern alcoholic beverages. The low alcoholic content was due to the limitations of fermentation and the nonexistence of distillation methods in the ancient world. Rabbinic teachers wrote acceptance criteria on consumability of ancient alcoholic beverages after significant dilution with water, and prohibited undiluted wine.
In the mid-19th century, some Protestant Christians moved from a position of allowing moderate use of alcohol (sometimes called "'moderationism") to either deciding that not imbibing was wisest in the present circumstances ("abstentionism") or prohibiting all ordinary consumption of alcohol because it was believed to be a sin ("prohibitionism"). Many Protestant churches, particularly Methodists, advocated abstentionism or prohibitionism and were early leaders in the temperance movement of the 19th and 20th centuries. Today, all three positions exist in Christianity, but the original position of alcohol consumption being permissible remains the most common and dominant view among Christians worldwide, in addition to the adherence by the largest bodies of Christian denominations, such as Anglicanism, Lutheranism, Roman Catholicism, and Eastern Orthodoxy. Argentina is the fifth largest producer of wine in the world. Argentine wine, as with some aspects of Argentine cuisine, has its roots in Spain. During the Spanish colonization of the Americas, vine cuttings were brought to Santiago del Estero in 1557, and the cultivation of the grape and wine production stretched first to neighboring regions, and then to other parts of the country.
Historically, Argentine winemakers were traditionally more interested in quantity than quality with the country consuming 90% of the wine it produces (45 liters per year or 12 U.S. gallons per year per capita according to 2006 figures). Until the early 1990s, Argentina produced more wine than any other country outside Europe, though the majority of it was considered unexportable. However, the desire to increase exports fueled significant advances in quality. Argentine wines started being exported during the 1990s, and are currently growing in popularity, making it now the largest wine exporter in South America. The devaluation of the Argentine peso in 2002 further fueled the industry as production costs decreased and tourism significantly increased, giving way to a whole new concept of enotourism in Argentina. The entrance at Blasted Church
In 2002, Proprietors Evelyn & Chris Campbell bought the 2 year old 17-hectare Prpich Hills Winery on the road between Okanagan Falls and Penticton. The property once housed a wooden church. In 1929, the church was dismantled, via a controlled dynamite explosion which loosened the nails, and reassembled in the center of Okanagan Falls where it now stands. The transformation or Prpich Hills in Blasted Church started with creative label redesigns by Vancouver designer Bernie Hadley-Beauregard of the design firm Brandever.
Blasted Church's first winemaker, Frank Supernak, died unexpectedly during the first harvest, prompting many other local vintners to assist the Campbell family in completing the production of finished wine. The images of these winemakers now adorn the bottle labels at Blasted Church. In 2004, Blasted Church became the first Okanagan vintners to produce all of their wines with screw-top bottle caps.
